The Best Quiche Recipe Ever!

...Or How To Clean Out Your Refrigerator...

My laptop made a rare journey downstairs. Rare as of this summer because of the serious overheating problem which causes my laptop to be carefully perched on a tin of tacks. And the dogs constantly trip over the cord resulting in a couple of laptop to floor crashes.

Joe and I spent yesterday night and this morning riding out Hurricane Irene. As far as what we got was some stronger than usual wind and some rain. These things kept me up all night. No major damage though which is good. The dog room leaked...of course.

But this blog isn't about riding out storms, or earthquakes. Apparently there was one earlier last week which I completely missed being in the grocery store. I did think I felt an aftershock on Friday morning-my light flickered and there was a hanger which danced in the closet without clothes.

Okay, so this is about making quiche. With a small amount of preparation (i.e. having a refrigerated or frozen pie crust available), you can make a great quiche! This also assumes you have one cup of dairy and three eggs present in the refrigerator too.

The first thing is let your crust thaw or come to room temperature. Blind bake it-generally 450 degrees for about 10-12 minutes. Be sure to either use pie weights or poke good deep holes all over with a fork.

Now you can make your filling. For me, I clean out the fridge-half a bag of spinich, onions, garlic, some chopped bacon, mushrooms-and I cook these. These go into a mix of three beaten eggs and 1 cup dairy. I tend to use 1/2 cup each milk and heavy whipping cream or buttermilk or half and half...something like that. I used ricotta once and decreased the amount of liquid. Add your seasoning-salt, pepper, whatever you like. And some cheese is always good. Then pour your filling into the pie shell. It will be very, very full so put your crust on a lined cookie sheet. Back into the oven at like 350 degrees for about an hour.

The quiche is done when the center is set and a knife comes out of the center clean. And that is the best quiche ever. I don't like quiche because I don't like eggs but Joe loves it. It does always smell good though...

Pinterest continues to lure me in and entice me with yummy desserts and food. That and anger me with posters advocating that nothing is as good as being thin and that I shouldn't eat that cookie. I ALWAYS should eat that cookie! Anyway, I made Cinnamon Roll Pancakes which were good but I failed to make the cinnamon filling thick enough causing the first pancakes (Joe's) to be delightful and the last ones (mine) to be comprised of carmalized (burnt) brown sugar and not so good. The recipe also only makes like 4-6 pancakes which they advocate only eating one or two of... The other thing I made because I didn't have enough brown sugar for cookie dough brownies was Carmel Crumb Bars. They are good, they are easy to make but could use a chocolate drizzle. These are the things that I learned when making them-1) don't reserve too much dough for the crumb part, 2) use dark brown sugar and 3) maybe cook the carmel longer. I think they took 40 minutes to bake too.

In addition to baking, Pinterest has me doing more crafts. If I can start projects upstairs and work on them in front of the TV, it seems like a lot could get done. Currently, I am working on a denim rag rug. I'll post a how to and pictures (for pinning!) when it gets further along. There are things that I have learned about this too (thimble, thicker thread, curved thicker needle-maybe one I use to sew up cows!).
